Beef spare (short) ribs are lean and tasty but need to be cooked slowly. Nearly all recipes benefit when after cooking the ribs are completely chilled and then re-heated. Our favorite way to cook ribs is to marinade in the fridge over night, then slow cook in the oven (this can be done days ahead) and BBQ just before eating.
